How to Use Leftovers: Apples

This week’s share of three apples from Hill Orchards may have you in a pickle. What can I do with just three apples? They could simply be three mid-afternoon snacks, or instead, an opportunity to experiment with recipes you never thought to try. Apple slices in your grilled cheese? Apple butter? Apple chips? Apples in a chicken dish? You may be surprised to discover just how versatile apples truly are. Paired with a savory cheese or meat, apples can amplify the overall flavor of the dish. Check out these easy recipes that will ensure that no apple goes to waste on your counter this fall!

 

Quick & Easy Apple Butter        Prep Time: 5 min     Cook Time: 45 Min

Ingredients:

4 medium apples, peeled, cored, chopped

Juice of 1 lemon

2 cups of water

1 tsp of vanilla extract

¼ cup of brown sugar

1 tsp of ground cinnamon

¼ tsp ground nutmeg

Instructions:

1. Place all ingredients in a sauce pan

2. Bring mixture to a boil

3. Turn down to low and let simmer for 45 minutes

4. Transfer the mixture to a food processor or blender. Blend until the mixture reaches a consistency.

 

Apple & Gouda Grilled Cheese        Prep Time: 5 min Cook Time: 5 Min

Ingredients:

4 slices of fresh crusty bread (perhaps from 7 suns!)

1 apple (calls for granny smith but we’re up for experimenting!)

4 slices of smoked or regular Gouda cheese

Butter

It's too gouda to believe! 

Instructions:

1. Lay out your slices of bread

2. Layer a slice of cheese on each piece

3. Add apple slices to your desire

4. Layer another slice of cheese on each piece

5. Top with remaining bread and slather with butter

6. Cook in skillet for 3-4 minutes on first side, 2-3 minutes on other side

 

Cinnamon Apple Chips        Prep Time: 10 min     Cook Time: 90 Min

Ingredients:

2-3 apples of your choice

Cinnamon/sugar

2 baking sheets

Instructions:

1. Preheat oven to 200 degrees

2. Wash and slice apples very thinly (thin cirlces)

3. Spread the slices in one layer on a lined baking sheet

4. Sprinkle with cinnamon and sugar

5. Bake for 1 hour, then flip the apples and bake for another 1-1 ½ hours

6. Let slices cool in the oven before removing

 

Skillet Chicken with Brussel Sprouts & Apples        Prep Time: 10 min     Cook Time: 30 Min

Ingredients

1 ½ lb. boneless, skinless chicken thighs

2 tsp. chopped fresh thyme

Kosher salt and black pepper

1 tbsp. canola oil

1 (12-oz.) package of shredded Brussels sprouts

1 sliced apple

½ sliced red onion

1 chopped garlic clove

2 tbsp. white balsamic vinegar

2 tsp. brown sugar

1/3 c. chopped toasted pecans

Don't chicken out! Try this apple recipe.

Instructions:

1. Season chicken thighs with fresh thyme, kosher salt, and black pepper

2. Cook in canola oil in large skillet over medium-high heat until cooked through (4-5 minutes per side). Transfer to plate

3. Add shredded Brussel sprouts, apple, red onion, and garlic clove to skillet. Cook, tossing until sprouts are wilted and onion has softened (5-6 minutes)

4. Stir in white balsamic and brown sugar. Season with kosher salt and black pepper

5. Return chicken to pan and top with toasted pecans
